Recipe: Quinoa Stuffed Peppers

Unbelievable sweet peppers stuffed with a healthy bonanza of quinoa, beans, veggies, and spices – and baked to golden perfection. Blissful. Also very healthy, gluten free, vegetarian, and can be vegan (skip the cheeses or replace with tofu). #foodsniffr


  • 1 cup quinoa, uncooked  - [get it here]
  • 2 cups water
  • 1/2 can black beans, rinsed and drained (about 1 cup or so) [get it here]
  • 1 carrot, shredded
  • 2 celery stalks, finely diced
  • 1/2 onion, finely diced
  • 3 cloves garlic, minced
  • 1/2 cup frozen peas
  • 1/2 cup corn
  • 1/2 cup water chestnuts, diced [get it here]
  • 1/4 tsp onion powder [get it here]
  • 1/4 tsp garlic powder [get it here]
  • 1/8 tsp seasoning salt [get it here]
  • salt & pepper [get it here]
  • 1/8 tsp cayenne pepper [get it here]
  • 1/2 cup tomato sauce [get it here]
  • 7 sweet peppers, any color
  • 1/2 cup Parmesan cheese, shredded – (vegans, sub this)
  • 1/2 cup Tex Mex blend cheese, shredded (vegans, sub this)
